Hearty Overnight Oats

Serves: 1 large portion or 2 small portions

Ingredients:
1/4 cup Greek vanilla yogurt
1/3 cup whole milk
1/3 cup whole grain rolled oats
1/4 teaspoon ground cinnamon
1 banana, mashed
1 teaspoon organic whole ground flaxseed meal
1 tablespoon honey
23 lightly salted whole cashews, chopped

Directions:
Mix first seven ingredients together. Store overnight in the refrigerator in an airtight container. Before eating, top with cashews.

Apple Blueberry Maple Oatmeal

Serves: 6 to 8

Ingredients:
1 cup steel-cut oats
1/4 cup packed brown sugar
1 tablespoon flaxseeds
1/2 teaspoon cinnamon
1 1/2 cup whole milk
1 1/2 cup water
1/4 cup 100% pure maple syrup
3 apples, peeled, cored, and diced
blueberries, to taste
raisins, optional

Diresctions:
Combine first eight ingredients. Put mixture in a slow cooker. Cover and cook on low for 6 hours. Top with blueberries and raisins, if desired. Have with a glass of water.

Easy Cheesy Hash Browns

Serves: 2

Ingredients:
2 frozen hash brown patties
1/4 cup shredded cheddar cheese
2 blades chives, chopped

Directions:
Follow package directions to bake frozen hash brown patties in the oven. When they are done, sprinkle with cheese. Return to the oven for one minute or until cheese is melted. Top with chives. Have with a good source of protein and a glass of water.

Waffle with Honey Butter and Blueberries

Serves: 1

Ingredients:
1 gluten free frozen waffle
1/2 tablespoon unsalted butter
1 1/2 teaspoons honey
16 fresh blueberries, gently rinsed and dried

Directions:
Toast waffle until heated through. In a small microwave safe bowl, microwave butter for 15 seconds or until melted. Add honey and stir until thoroughly combined. Drizzle honey butter over waffle and top with blueberries. Have with a glass of water and a good source of protein that does not contain sugar, such as my Cheese Omelet recipe.

Waffle Breakfast Sandwich and Blueberries

Serves: 1

Ingredients:
2 eggs
1/8 cup milk
2 dashes pepper
1 oz. cheddar cheese, shredded
1 tablespoon unsalted butter
2 frozen waffles that are not made with enriched flour, such as a gluten free waffle made with brown rice flour. The brand I buy has 2g sugar per waffle.
blueberries, rinsed

Directions:
Beat eggs, milk, and pepper. Stir in cheese. Melt butter in a small skillet over medium heat. Add egg mixture. Cook and stir until eggs are fluffy and cheese is melted. Toast waffles according to package directions. Put scrambled eggs between waffles. Have with a handful of blueberries and a glass of water.
