Hearty Overnight Oats

Serves: 1 large portion or 2 small portions

Ingredients:
1/4 cup Greek vanilla yogurt
1/3 cup whole milk
1/3 cup whole grain rolled oats
1/4 teaspoon ground cinnamon
1 banana, mashed
1 teaspoon organic whole ground flaxseed meal
1 tablespoon honey
23 lightly salted whole cashews, chopped

Directions:
Mix first seven ingredients together. Store overnight in the refrigerator in an airtight container. Before eating, top with cashews.

Freezer Meals

Taking a cooler full of freezer meals to a loved one. Making freezer meals is easy. Simply make a double batch of your favorite recipes or save your leftovers. Wrap single portions in aluminum foil, seal in freezer baggies, and label. If you’re not sure if the foods you have will freeze well, do an internet search to find out. Examples of foods that freeze well include: cooked meats, soups, pasta dishes, and casseroles. To use, put what you plan to eat in the refrigerator the night before to unthaw and microwave until heated through.

What I Make

Bacon Chicken

Serves: 4

Ingredients:
2 boneless skinless chicken breasts
1/4 teaspoon garlic powder
1 teaspoon paprika
1/4 teaspoon pepper
2 slices thick-cut bacon

Directions:
Preheat oven to 400 degrees. Put chicken breasts in a baking dish lined with aluminum foil. Sprinkle spices on chicken breasts. Top each chicken breast with a slice of bacon, overlapping the bacon as little as possible. Bake for 30 minutes or until chicken is cooked through and bacon is crisp. Serve with your favorite healthy side dishes, such as my Carrots with Honey Butter recipe, and a glass of water.
