Cheeseburgers with pickles, lettuce, and a tangy sauce

Serves: 4

Ingredients:
1/4 cup mayo
1 tablespoon French dressing
2 teaspoons sweet pickle relish
onion powder, to taste
1/2 teaspoon white vinegar
1/2 teaspoon sugar
pinch of salt
1 lb. lean ground beef (I buy 93% lean/7% fat)
4 slices American cheese
4 hamburger buns (preferably whole grain or slider size)
dill pickles, to taste
shredded iceberg lettuce, to taste

Directions:
Whisk first seven ingredients together and set aside. Shape ground beef into four equal size burger patties. Place burger patties on a broiler pan and broil on high for about 30 minutes, flipping a few times during the broiling process. When the burger patties are cooked through and no longer pink inside, remove them from the oven and top with a slice of cheese. Put the burger patties with the cheese on the bottom half of a bun and top with pickles. Spread sauce on the inside of the top half of the bun and cover with lettuce. Carefully put the bun with the sauce and the lettuce on top of the bun with the cheese covered burger patty and pickles. Have with a glass of water.

Chocolate, Banana, and Peanut Trail Mix

Serves: 4

Ingredients:
2/3 cup banana chips
32-60% cacao bittersweet chocolate chips (The brand I buy has 6g sugar in 16 chips.)
1/4 cup dry-roasted or lightly salted cocktail peanuts

Directions:
Mix ingredients together. To stay under 10g sugar per serving, put 1/4 cup in four separate airtight containers or snack baggies and just eat one serving at a time. Have with a glass of water.

Swiss Steak

Serves: 6

Ingredients:
1 1/2 lbs. round steak, 3/4 to 1 inch thick
1/4 cup flour
3/4 teaspoon salt
1/4 teaspoon pepper
onion powder to taste
2 tablespoons unsalted butter
1-14 1/2 oz. can stewed tomatoes
1/2 teaspoon Worcestershire sauce

Directions:
You can make this all in one piece, but it is easier to handle the meat if you cut it into six pieces. Combine flour, salt, pepper, and onion powder in a resealable gallon plastic bag. Shake steak in mixture in plastic bag until covered. Set an electric skillet to 300 degrees. Melt butter in skillet. Brown meat on both sides. Take the meat out of the skillet and carefully wipe the skillet out with a paper towel. Put the steak back in the skillet. Top with tomatoes and sprinkle with Worcestershire sauce. Cover skillet. Change heat setting to simmer and cook for 1 1/2 hours. Serve with Former Browniemaker’s Basil and Garlic Potato Wedges. Have with a glass of water.

Quick Garlic Cheese Bread

Serves: 1

Ingredients:
1 slice bread that is not made with enriched flour
1/2 tablespoon unsalted butter
garlic powder, to taste
shredded mozzarella cheese, to taste
parsley flakes, to taste

Directions:
Put oven broiler on high setting. Toast bread in a toaster. Microwave butter for 30 seconds or until melted. Brush toasted bread with melted butter and sprinkle with garlic powder. Put toasted bread on a baking sheet lined with aluminum foil. Top with cheese and sprinkle with parsley. Put toast under broiler for two minutes or until cheese is melted.

Easy Lunch

Serves: 1

Ingredients:
1 natural Angus beef microwaveable hot dog
1 sliced hot dog bun (I use a hot dog bun made with enriched flour, because I have not found one I like made with whole grain. The brand I buy has 3g sugar per bun.)
1 organic Bartlett pear
1 organic string cheese stick

Directions:
Microwave hot dog according to package directions. Place hot dog in a bun. Rinse and slice pear. Take string cheese stick out of the wrapper. Have with a glass of water.
