Tomato Stew Meat, Coleslaw, and a Wheat Roll

Serves: 4

Ingredients:
3 tablespoons butter
2 lbs. cubed stew meat
1 cup tomato juice
2 cups water
1/4 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
1 tablespoon yellow mustard
1 bay leaf
1/2 cup mayonnaise
yellow mustard, to taste
2 tablespoons sugar
1/2 tablespoon apple cider vinegar
pepper, to taste
onion powder, to taste
4 oz. shredded green cabbage, red cabbage, and carrots
4 frozen warm and serve dinner rolls made with 100% whole grains, such as stone ground whole wheat flour

Directions:
Preheat oven to 325 degrees.* Melt butter and brown meat in a pan over medium heat. Put meat in a casserole dish. Discard liquid in pan. Pour tomato juice and water in pan. Add flour and stir. Add salt, 1/4 teaspoon pepper, 1 tablespoon yellow mustard, and bay leaf. Simmer for 10 minutes, so sauce becomes thick. Pour sauce over meat. Cover casserole dish and bake for two hours, so meat becomes tender. In a bowl, whisk together 1/2 cup mayonnaise, yellow mustard to taste, sugar, apple cider vinegar, pepper to taste, and onion powder. Stir in shredded cabbages and carrots. Cover and refrigerate coleslaw before serving. Follow package directions for warming rolls to be done at the same time as the meat. The brand I buy goes in the oven at the same temperature as the meat for 15 minutes. Before eating the meat, remove the bay leaf. If you eat one serving of meat, have with 1 serving (according to nutrition label) of milk. If you have two servings of meat, have with a glass of water.

*Instead of putting this in the oven, you can cook it in a crockpot on high for three hours.

Frittata with Grapes

Serves: 3

Ingredients:
6 eggs
1/3 cup milk
3/4 cup shredded cheddar cheese*
1 cup chopped ham**
45 grapes

*I prefer to buy a block of cheese and shred it or cut it into small pieces myself, because it has a shorter list of ingredients. But, packaged shredded cheese will work fine.

**I like to use fully cooked hickory smoked ham steaks. According to the package directions, they can be heated up in the microwave in a covered dish with 1/4 cup water for 4 minutes. If your grocery store doesn’t sell that, any cooked ham will work.

Directions:
Preheat oven to 350 degrees. In a bowl, beat eggs and milk together with a wire whisk. Stir in cheese and ham. Pour into a greased 9 inch pie plate and bake for 40 minutes or until eggs are set. Serve with approximately 15 grapes per person. Have with a glass of water.

Ham and Cheese Potato

Serves: 1

Ingredients:
1 russet potato that is not a mammoth size
1 tablespoon unsalted butter cut into 9 pieces
1 serving (according to nutrition label) shredded mild cheddar cheese*
1/2 cup chopped ham**

*I prefer to buy a block of cheese and shred it or cut it into small pieces myself, because it has a shorter list of ingredients. But, packaged shredded cheese will work fine.

**I like to use a fully cooked hickory smoked ham steak. According to the package directions, it can be heated up in the microwave in a covered dish with 1/4 cup water for 4 minutes. If your grocery store doesn’t sell that, any cooked ham will work.

Directions:
Scrub the potato and pat it dry with a paper towel. Poke holes in the potato with a fork. Cook the potato on a paper towel in the microwave for 5 minutes or until the skin has started to shrivel like your fingers in the bathtub. Wrap the potato in aluminum foil while warming up the ham. Cut the potato in half and score the inside. Dot with butter. Top with ham and cheese. Microwave for 1 minute or until cheese is melted. Have with a glass of water.

Snack Mix

Serves: 1

Ingredients:
1 serving (according to nutrition label) baked cheddar crackers that are not made with an enriched flour, such as organic wheat flour
1 serving (according to nutrition label) lightly salted cashews
3/4 tablespoon raisins or 1/2 mini box raisins with 10g or less sugar

Directions:
Mix ingredients together. Have with a glass of water.

Parmesan Chicken, Green Beans with Almonds, and Oranges

Serves: approximately 6

Ingredients:
1-20 oz. pkg. boneless skinless chicken breasts
3 tablespoons vegetable oil
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
6 tablespoons grated Parmesan cheese
40 fresh green beans
1 tablespoon butter
pinch of salt
pinch of pepper
sliced almonds, optional
3 oranges

Directions:
Preheat oven to 450 degrees. In a small bowl, mix vegetable oil with garlic powder and Italian seasoning. Dip chicken breasts in oil mixture. Place chicken breasts in a foil lined pan and top with Parmesan cheese. Make sure to thoroughly wash everything that came in contact with the raw chicken. Bake for 25 to 30 minutes or until chicken is no longer pink and juices run clear. While the chicken is in the oven, snap the ends off the green beans and break the beans in half. Cook the green beans in boiling water for 7 minutes. Drain. Melt butter. Mix the green beans with the butter, pepper, salt, and almonds. When chicken is done, place it on a serving platter lined with a paper towel. Slice oranges. Have with a glass of water.
