Ingredients:
3 russet potatoes
4 tablespoons unsalted butter
Seasoned salt, to taste
Directions:
Preheat oven to 375 degrees. Put butter in a large microwave safe bowl and microwave until butter is melted. Wash, peel, and cut potatoes into bite-sized cubes. Put potatoes in the bowl with the melted butter. Sprinkle potatoes with seasoned salt. Stir until well combined. Put seasoned potatoes and butter in a foil lined baking dish. Bake potatoes for 17½ minutes. Stir and flip potatoes. Bake for another 17½ minutes. Stir and flip potatoes again. Broil on high for 10 minutes or until golden brown. Have with a good source of protein.

6 new potatoes
2 teaspoons vegetable oil
1/8 teaspoon parsley flakes
unsalted butter, to taste (optional)
Directions:
Preheat oven to 450 degrees. Put 1 teaspoon of oil and a dash of parsley flakes on the center of two sheets of aluminum foil. Put 3 potatoes on top of the oil and parsley on each sheet. Roll the potatoes around to coat in the oil and parsley. Tightly wrap aluminum foil around the potatoes. Place both foil packets on a baking sheet and bake for 1 hour or until soft. Open foil packets carefully. Put potatoes on a plate and smash with a fork. Top with butter, if desired. Serve with a good source of protein, such as my recipe for: Meatloaf, Salisbury Steak, or Swiss Steak. Have with a glass of water.

Ingredients:
1 ½ lbs. lean ground beef (I use 93% lean/7% fat.)
1 egg
3 slices white bread, torn into small pieces (I’ve tried whole grain bread, but white bread works better.)
1 cup whole milk (I’ve tried skim milk, but whole milk works better.)
onion powder, to taste
1 tablespoon Worcestershire sauce
1 ¼ teaspoons salt
Preheat oven to 350 degrees. Mix ingredients together until well combined. Mixture will be kind of soupy. Use a small cookie dough scoop to scoop the meat mixture into meatballs about the size of golf balls. Place meatballs close together without touching on foil lined cookie sheets. Bake for 30 minutes or until the meatballs are cooked through and the outsides are crisp. Using tongs, immediately remove the meatballs from the greasy foil lined pans and put them in a serving bowl. Have with a glass of water and a healthy carbohydrate, such as one serving of: whole grains, fruits or vegetables.
