Serves: 4
Ingredients:
1 lb. ground beef (I buy 93% lean/7% fat.)
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon paprika
1/8 teaspoon salt
1/2 cup shredded mozzarella cheese, divided
Directions:
Mix meat and spices together. Divide meat mixture equally and form into four thin patties. Put patties on a broiler pan and broil on high for approximately 15 minutes, flipping occasionally. When meat is well done, top each patty with 1/8 cup cheese. Continue broiling for 2 to 3 minutes or until cheese is melted. Have with a glass of water.
Suggested Sides and Dessert:
corn on the cob (see my Flank Steak with Corn, Caesar Salad, and Watermelon recipe)
green beans (see my Chicken, Orangetti Squash, Beans, and Berries recipe)
garlic mashed potatoes and cooked carrots (see my Roast, Garlic Mashed Potatoes, and Cooked Carrots recipe)
sliced strawberries or my recipe for Berry Pie

Ingredients:
1-6 oz. box organic shells and white cheddar macaroni and cheese and the ingredients to make it
1/2 cup cooked diced ham (I like to use a fully cooked hickory smoked ham steak. According to the package directions, it can be heated up in the microwave in a covered dish with 1/4 cup water for 4 minutes.)
Directions:
Make shells and white cheddar cheese macaroni and cheese according to the package directions. Add ham and stir until well combined. Have with a glass of water.
Serves: approximately 8
Ingredients:
1 lb. lean ground beef (I buy 93% lean/7% fat)
1 packet taco seasoning mix* and the ingredients to make it
1 can refried beans
shredded iceberg lettuce, to taste
Mexican shredded cheese blend, such as: Monterey Jack, Cheddar, Asadero, and Queso Quesadilla cheese, to taste
diced tomatoes, to taste
organic tortillas that are not made with an enriched flour
*I like to buy a popular restaurant brand of dry seasoning mix that starts with the first three letters of Chicago. I don’t like to buy taco seasoning that makes a sauce, because the shells get soggy. I also take 1 teaspoon of seasoning out of the packet before mixing it into the meat so it is not too spicy.
Directions:
In a large skillet over medium-high heat, crumble ground beef while browning it until it is no longer pink. Add seasoning according to package directions. Put beans in a microwave-safe dish. Heat beans in the microwave for approximately 1-1/2 minutes. Spread a layer of beans on a tortilla. Leave approximately 1 inch between the beans and the edge of the tortilla. Without over stuffing the tortilla, top the beans with seasoned meat, lettuce, cheese, and tomatoes. Fold tortilla so filling does not fall out when eating. Have with a glass of water.
