Hamburger Pizza

Makes: one 12 inch pizza

Ingredients:
1 pizza crust mix that is not made with an enriched flour (the brand I buy is gluten free) and the ingredients to make it
1/4 lb. lean ground beef (I buy 93% lean 7% fat)
dried basil leaves, to taste
dried Italian seasoning, to taste
jarred pizza sauce
1 1/2 cups shredded mozzarella cheese
grated Parmesan cheese, to taste
dried parsley flakes, to taste

Directions:
Make crust according to package directions. If your mix makes two 12 inch pizza crusts, freeze one to use another day. Crumble and brown ground beef. Drain grease. Mix in basil and Italian seasonings. Since jarred pizza sauce contains sugar, spread a thin layer on the crust. Top pizza with 3/4 cup mozzarella. Top cheese with cooked ground beef. Top meat with the remaining mozzarella. Sprinkle with Parmesan and parsley. Bake according to crust package directions. Have with a glass of water.

Super Salad

Serves: 1

Ingredients:
1 serving of a salad kit that has green and red cabbage, lettuce, kale, carrots, green onions, and sunflower seeds or buy the ingredients separately and chop the veggies
1 hard boiled egg, chopped (To hard boil an egg, see my Parmesan Pasta, Deviled Eggs, and Carrots recipe.)
5 stringless sugar snap peas, chopped
1 mini box raisins
9 organic seasoned croutons that are not made with an enriched flour (To make your own croutons, see my Homemade Croutons recipe. The brand of premade croutons I buy is found in the refrigerated produce section at my local co-op.)
salad dressing included in the salad kit or any salad dressing (The brand I buy comes with a yummy Sweet Onion & Citrus Dressing.)

Directions:
Top veggies with sunflower seeds, egg, sugar snap peas, raisins, and croutons. Lightly drizzle with salad dressing and toss. Have with a glass of water.

Banana Parfait

Serves: 1

Ingredients:
1 small banana
1 graham cracker square that is not made with an enriched flour
aerosol whipped cream

Directions:
Put graham cracker in a zipper baggie. Close baggie and crush graham cracker with a rolling pin. Peel and slice banana. Put 1/2 of the banana slices in a single size serving dish. Top with a small squirt of whipped cream and approximately 1 teaspoon of graham cracker crumbs. Put remaining banana slices on top. Squirt the second layer of bananas with whipped cream and sprinkle with graham cracker crumbs to taste.

Ultimate Ice Cream Sandwich

Serves: 2

Ingredients:
1 strawberry, or any flavor, ice cream sandwich that has 16g sugar or less
fresh fruit
aerosol whipped cream

Directions:
Cut ice cream sandwich in half, so each half has less than 10g sugar. Top with fresh fruit and a small squirt of whipped cream.

Pumpkin Pancakes

Serves: 3

Ingredients:
gluten free pancake mix and the ingredients to make 9 4-inch pancakes
1/2 cup 100% pure pumpkin
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
5-60% cacao bittersweet chocolate chips
2 tablespoons refrigerated plain cream cheese spread
aerosol whipped cream

Directions:
Prepare pancake mix according to package directions. Add canned pumpkin and spices. Stir until well combined. Cook pancakes according to package directions. Carefully chop chocolate chips. Microwave cream cheese for 10 seconds. Spread a pancake with cream cheese. Top it with another pancake and spread with cream cheese. Put a third pancake on top of the stack. Top with a small squirt of whipped cream and sprinkle with chocolate. Eat with a good source of protein that has less than 2g sugar, such as: a slice of ham, a handful of nuts, or a scrambled egg. Have with a glass of water.
