Power Meal

Serves: 1

Ingredients:
1 frozen hash brown patty
1 egg
1 tablespoon whole milk
pepper, to taste
1 tablespoon unsalted butter, divided
Mexican shredded cheese blend, such as: Monterey Jack, Cheddar, Asadero, and Queso Quesadilla cheese, to taste
1 slice bread that is not made with an enriched flour
organic fruit spread (I used Concord grape and strawberry. The brand I buy has 7g sugar in 1 tablespoon.)
1 frozen microwaveable sausage link
cottage cheese

Directions:
Bake hash brown patty according to package directions. Whisk together egg, milk, and pepper. Melt 1/2 tablespoon butter in a small non-stick skillet over medium heat. Add egg mixture and cook, stirring frequently, until eggs are light and fluffy. Sprinkle with cheese and stir until melted. Toast bread. Microwave 1/2 tablespoon butter in a microwave-safe dish for 40 seconds or until melted. Brush toast with butter and spread with a thin layer of fruit spread. Microwave sausage according to package directions. Serve with cottage cheese. Have with a glass of water.

What I Make

Hamburger Pizza

Makes: one 12 inch pizza

Ingredients:
1 pizza crust mix that is not made with an enriched flour (the brand I buy is gluten free) and the ingredients to make it
1/4 lb. lean ground beef (I buy 93% lean 7% fat)
dried basil leaves, to taste
dried Italian seasoning, to taste
jarred pizza sauce
1 1/2 cups shredded mozzarella cheese
grated Parmesan cheese, to taste
dried parsley flakes, to taste

Directions:
Make crust according to package directions. If your mix makes two 12 inch pizza crusts, freeze one to use another day. Crumble and brown ground beef. Drain grease. Mix in basil and Italian seasonings. Since jarred pizza sauce contains sugar, spread a thin layer on the crust. Top pizza with 3/4 cup mozzarella. Top cheese with cooked ground beef. Top meat with the remaining mozzarella. Sprinkle with Parmesan and parsley. Bake according to crust package directions. Have with a glass of water.

What I Make

Mac and Cheese with Ham and Peas

Serves: 1

Ingredients:
1/8 cup frozen peas
1/2 cup diced ham (I like to use a fully cooked hickory smoked ham steak. According to the package directions, it can be heated up in the microwave in a covered dish with 1/4 cup water for 4 minutes. If your grocery store doesn’t sell that, any cooked ham will work.)
1 serving size frozen macaroni and cheese, preferably organic

Directions:
Put frozen peas and cooked ham in a bowl. Microwave macaroni and cheese according to package directions. When done, put piping hot macaroni and cheese into the bowl with the peas and ham. Stir to combine. Have with a glass of water.

Garlicky Carrots and Broccoli

Serves: 6

Ingredients:
2 cups orange and yellow baby carrots, preferably organic
1 cup frozen chopped broccoli, preferably organic
2 tablespoons unsalted butter, preferably organic
1/4 teaspoon garlic powder

Directions:
Put 4 cups water and carrots into a medium saucepan. Bring water to a boil and cook carrots for ten more minutes. Add broccoli and cook for another 5 minutes. Drain. Microwave butter in a small microwave-safe bowl for 40 seconds or until melted. Stir butter and garlic powder together until thoroughly combined. Pour butter mixture over vegetables and toss to coat. Have with a good source of protein and a glass of water.

Sweet & Salty Snack

Serves: 2

Ingredients:
1 tablespoon unsalted butter
1/2 teaspoon cinnamon sugar
1 1/3 cup rice cereal squares
1 mini box raisins
1/4 cup lightly salted cashews halves & pieces

Directions:
Microwave butter in a microwave safe bowl for 40 seconds or until melted. Stir cinnamon sugar and butter together until well combined. Put cereal in a microwave safe bowl. Drizzle butter mixture over cereal and stir. Microwave cereal mixture for 1 minute. Stir in raisins and cashews. Cool completely before eating. Have with a glass of water.
